I’m kale obsessed and you should be too.

Here’s why:

I typically make my kale salad with granny smith apple slices, avocado, quinoa, green onion, toasted pecans, dried cranberries and Annie’s Honey Mustard Vinaigrette. Then I make kale chips with whatever leftovers I have from the week. Simple, easy, and healthy!

Perla’s Seafood and Oyster Bar

Perla’s on South Congress is one of my favorite seafood restaurants in Austin. My family and I went there this weekend and had an amazing brunch. I highly recommend this restaurant for lunch, brunch, or dinner!

Mouth-watering appetizer of hush puppies

My dad enjoyed half-a-dozen oysters and an “oyster shooter.” I am not an oyster fan but he was quite satisfied with this appetizer. I will just have to take his word for it!

My mom’s meal was killer… ceviche and a shrimp po boy

This is my go-to favorite for brunch at Perla’s: Brioche French Toast with coconut ice cream and maple syrup. It’s simply delicious. However, I recommend ordering a side of bacon, sausage, or eggs with this dish. The rich, sweet flavor needs something salty for balance.

“Lick” in Honor of National Ice Cream Month

Yesterday I decided to check out the new artisan ice cream shop in Austin called Lick. Unlike any other ice cream shop, Lick offers all organic, homemade ice cream with local ingredients and unusual flavors. Each flavor has its own unique twist. I sampled “Lemon Lavender” and set my mouth on fire with “Too Hot Chocolate” until I found my favorite combination: “Fresh Mint and Chocolate Chunk” and “Orange Chocolate”. The fresh mint flavor is literally a burst of cool mint with savory-sweet chocolate chunks mixed in. Thank you July for being National Ice Cream Month, so I don’t feel bad when I go to Lick again next week.

Fresh Peach and Blueberry Crisp

I think it’s a well-known fact that the way to a man’s heart is through food. I’m sure my dad can attest to that after being awarded with this fabulous dessert in honor of father’s day yesterday. Plus, what’s better than fresh fruit in the summer, baked into a buttery, cinnamon-almond crisp and topped with a scoop of vanilla ice cream?! See the recipe below, adapted from Food & Wine.

Fresh Peach and Blueberry Crisp

Ingredients:

Filling:
8 ripe peaches, peeled and sliced
1 cup blueberries
1/2 cup granulated sugar
2 teaspoons fresh lemon juice
1 Tablespoon cornstarch

Topping:
1 cup quick-cooking oats
1 cup almonds, roughly chopped
3/4 cup all-purpose flour
3/4 cup light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 stick cold unsalted butter, cut into pieces

Instructions:

  1. Preheat the oven to 375°. In a large bowl, combine the fresh peaches, peeled and sliced, with the blueberries, granulated sugar, cornstarch, and lemon juice. Toss well and transfer the fruit to an 8-by-11-inch baking dish.
  2. In a separate bowl, combine the brown sugar, salt, cinnamon, nutmeg, and the 3/4 cup of flour. Using your fingers, or a fork, incorporate the butter until coarse crumbs form. Mix in the oats and almonds. Spread the mixture evenly over the fruit and bake for 50 minutes to an 1 hour, or until the top is golden brown and the fruit is bubbling.
  3. Serve warm with a scoop of vanilla ice cream!

Spring Salad

I have a new favorite salad and the inspiration came from this Mango, Orange & Avocado Salad.

 I made a version of this salad this weekend. I used what I had on hand so my salad consisted of mango, avocado, red onion, sunflower seeds, and a red wine vinaigrette. The combination of mango and avocado is pretty much unbeatable and is definitely my new favorite salad to make for spring!

I’m sure there are plenty of different varieties of this salad. You can basically just combine the avocado and mango with anything you have on hand and it is delicious!
