Kerbey Queso Recipe

Yesterday my mom and I decided to try to make Kerbey Queso (the absolute BEST queso in Austin) from Kerbey Lane Cafe. Three layers of guacamole, queso blanco, and pico de gallo make this queso the talk of the town and a late night favorite for many of Austin’s college students.

You can buy guacamole, queso blanco, and pico de gallo already made at the store but it is all very easy to make. Here are the steps…

FIRST LAYER: GUACAMOLE

Made with one avocado, diced tomato, cilantro, and a dash of lime. We didn’t add salt because the cheese and chips are already salty.

SECOND LAYER: QUESO BLANCO

We made queso blanco by first making a white sauce and then adding the cheese. We found that just melting the white cheddar wouldn’t give it the same creamy texture of queso blanco. We also cooked it with onion and diced jalapeno to give it more flavor.

Here is the recipe for queso blanco that we came up with for a yield of 1 1/2 cups:

Ingredients

2 Tbsp Yellow Onion

1 Tbsp Canola or Vegetable Oil

1 Tbsp Flour

1 Cup Milk

1/2 Pound of Shredded White American Cheddar

1-2 Tbsp Diced Jalapeno

Instructions

Saute the yellow onions in the canola or vegetable oil in a large saucepan for about 5 minutes. Then add the flour and stir. Add the milk slowly while continuously stirring. When the sauce thickens start adding the shredded cheese while still stirring. Add the diced jalapeno to taste

LAYER 3: PICO DE GALLO

Made with diced tomato, red and yellow onion, jalapeno, cilantro, and a little bit of lime.

  2. How does this compare to the real deal? I just moved away from Austin and miss Kerbey Queso terribly!!

    • Hi Caiqian, sorry I am just now getting back to you! I have been traveling this summer and am finally back in Austin again. I do think this recipe is close to the real deal and definitely better than the Velveeta queso or anything that you could buy pre-made at the grocery store. It is pretty hard to figure out the secret they use to make Kerbey Queso but the guacamole and pico de gallo really help to get you the same taste! The real deal is always hard to beat :).
